{cafe rio salads}

i'm pretty sure i could eat cafe rio salads everyday. no exaggeration. it's got to be the cilantro mixed with those delicious tortillas. well, i found a recipe for it on pinterest {http://www.the-girl-who-ate-everything.com/2008/10/missing-cafe-rio.html} and decided to try it yesterday! 

Here was the other tip from pinterest I used (i didn't have time to do the crock-pot chicken recipe, so i improvised and boiled it):  throw the cooked chicken into your Kitchen Aid mixer with the cookie paddle attachment. Turn it onto speed 4-6 and in just 20 seconds you'll have perfect, restaurant style shredded chicken.  Tip: Make sure the chicken is warm/hot before you shred it. Refrigerated chicken is harder and may harm your mixer.

this is genious! It shreds it perfectly. I just boiled a few chicken tenders and a breast until they were done, added some italian dressing, then put it straight in the kitchen aid.
